Blistered haricot verts with red onion marmalade

6-8 servings


Onion Marmalade
  • kosher salt
  • freshly ground black pepper
  • 3 each chili de arbol
  • 1/8 cup vegetable oil
  • 1 tbsp light brown sugar
  • 1/4 cup balsamic vinegar
  • 1 sprig rosemary leaves, chopped
  • 1 medium red onion, halved and thinly sliced
Haricot Vert
  • freshly ground black pepper
  • kosher salt
  • 2 lbs haricot verts, snipped
  • 1/4 cup EVOO

Onion Marmalade Procedure

Heat oil in a medium sized pot.  Begin sweating the onions over medium heat, about 10 minutes.  Stir constantly for even cooking.  Add all other ingredients and cook until slightly thickened.  Adjust seasoning as needed and remove the chilies.


Haricot Vert Procedure

In a medium pot boil well salted water. Add the haricot vert to the pot and cook for 90 seconds. Strain the haricot vert into a bowl filled with ice water. After cooled, strain and use whenever ready.

To blister the haricot vert, heat a large wide pan or pot over high heat. Add the haricot vert to the dry pot, stirring so they get slightly blackened, but not burnt. 

Carefully add ¼ c of evoo (the pan will smoke). Stir rapidly and turn the pan off. Season the beans with salt and black pepper. Top with the onion marmalade.
